When we discussed orangettes and citronnettes with our chocolatier, a former member of La Maison du Chocolat, we urged him to use a particular variety of peel that is extremely soft. It's a bit more complicated to produce, but the result is amazing.

Candied orange peels and candied lemon peels, soft and coated in dark chocolate
The orange or lemon peels are cut into thin strips, candied, drained, and then coated in dark chocolate. A signature product of La Meringaie: the softness and aroma of the peels, combined with the chocolate’s slight bitterness.
