I had wanted a brioche in our range for a long time, but with contrasting textures: soft, crunchy, and firm. The babka, this recipe of Polish origin, was exactly what I was looking for: the braiding gives these different textures. And there you have it, our Chef developed it in no time, and we launched the chocolate version in our Paris shops in 2020. A delight. Well, you also have to try the pink praline... Oh yes, one last tip, it's even better warmed up in the oven.
