I wanted a brioche in our range for a long time, but one with contrasting textures: soft, crunchy, and firm. The babka, a recipe of Polish origin, was exactly what I was looking for: the braiding results in different textures. And there you have it, our Chef developed it in no time, and we launched the chocolate version in our Paris shops in 2020. A delight. You must also try the pink praline... One final tip, it's even better warmed up in the oven.
